Ajinomoto Vietnam's current line of fermented vinegar products includes two varieties: "AJINOMOTO" Rice fermented vinegar and "AJINOMOTO" Apple fermented vinegar. These products not only make vegetables and salads more appealing but also enrich meals.
"AJINOMOTO" Rice fermented vinegar
"AJINOMOTO" Rice fermented vinegar is brewed naturally from 100% rice. During the fermentation process, the vinegar seed bacteria has listened to a chamber and classical music which creates high-quality rice fermented vinegar with mild sweet-sour taste, rich flavor, and ensuring safety and health for consumers.
In addition, "AJINOMOTO" Rice fermented vinegar is produced with a special recipe for a dedicated restaurant channel. It’s a good choice for a professional chef to use in various dishes.
"AJINOMOTO" Apple fermented vinegar
"AJINOMOTO" Apple fermented vinegar is naturally fermented from rice and concentrated apple juice, providing a sour taste combined with the sweet taste. With a fermentation process using Japanese technology, "AJINOMOTO" Apple fermented vinegar not only retains nutrients but also creates a delicious, appealing flavor.

To produce high-quality "AJINOMOTO" Rice fermented vinegar, rice is carefully selected and examined for food hygiene and safety regulations before steamed and brewed.
During the fermentation process, vinegar seed bacteria and other ingredients are added then brewed in more than 2 months. The vinegar seed bacterial has listened to the chamber and classical music. According to Japanese experience, this can increase the fermented effect and produce a higher quality finished product.
The fermented mixture will be filtered and pasteurized to ensure food hygiene and safety before packaged and delivered to consumers.
These production steps are also part of the "AJINOMOTO" Apple fermented vinegar process, where the rice vinegar is combined with high-concentration vinegar and concentrated apple juice to produce high-quality "AJINOMOTO" Apple fermented vinegar.
